Reasons. 1) Raw papaya paste was not used (is used to tender the meat) 2) Lemon juice is used (will make the meat even harder) 3) Use of ghee ( traditionally animal fat is used) 4) Use of potli masala (traditionally only safron and kewra water is used ) 5) Meat pieces are too small 6) Use of round bottomed vessel to cook ( traditionally flat and heavy bottomed vessels are used for dum) 7) Dum done over live fire ( Dum is done over burning charcoal not live fire ) 8) Use of one sided DUM (Dum has to be from both top and bottom). If you think I am being too strick in the rules , then simply call it your style biryani ( I am sure it will taste as good ) . What I am talking here is about Authenticity.
Please can u do me a favour by sharing ur recipe in detail, with perfect measurements n step by step procedure, im kinda dying to get an AUTHENTIC hyderabadi biryani recipe from long time but seems no luck, n the way u mentioned in ur comments abt recipe it seems u are quite experienced with biryani preparations, my husband is a food freek n a big biryani fan his Birthday is on 1st may it will be a great suprise if im able to make a gud one, n ya when ever i prepare biryani i sort of dont get good gravy which we get in paradise biryani if u can help on that too it will great!! I accidentally found this receipe. I've had this biryani everytime I visit viceroy. I recommend his biryani to all my friends. He beats all the good biryani in hyderabad( nizams club and paradise as well).

Nobody put potli Ka Masala in Hyderabadi Authentic Biryaani EVER!! Potli ka Masala goes in Khorma ,Nihari and other meat stews.

Yes they use potli ka Masala.. Which has some roots in it. If you don't believe me go to Charminar area where the sell all of this stuff in Bulk.
I'm a "pucca" Hyderabadi, born, raised and lived there for the first 35 of my 57 years and you? Sure, they've "potli ka masala" at any "dawasaaz" or "kirana" store, meant for "khorma" and "nahari" or "paaya" as some call it, but definitely, positively NOT as an ingredient of Hyderabadi Biryani!!! If there are any signs of "potli ka masala" (eg: a bay leaf) in biryani, well, it could be some kind of biryani, but NOT authentic Hyderabadi Biryani!!! Siasat, if you can't post something authentic, don't, but please, please don't kill Hyderabadi cuisine. At least have someone like Nawab Shah Alam Khan go through Hyderabadi recipes before you post them! Didn't expect this from Siasat.

I ever saw potli masala in Biryani potli masala ude for PAYA or KHORMA he is not hyderabadi next he use Garam Masala powder only as per me its not BIRYANI

Dum ki Biryani k liye Gost ku saperate nahi pakana, jab Gost k sath Masala mix karne k baad uske saperate rakdena, Basmati rice ku 50% pakana aur Us gost masala mix k upar Bichana phir 20-25 minutes Dum par rak dena, rice puri tarah dum hone tak Gost bhi Dum ho jata, Phir Dum ki Biryani Tayar, jaise video mein hai, Dahi ki Chattni k liye, Half KG Dahi, Do pcs Onions ku chopped karna, ek bunch Dhaniya patti chopped karna, 5-6 hari Mirch Chopped karna, phir Ek Vessel mein Chopped Onions, Dhaniya, Hari Mirchi ku Namak Milakar by hand Mix karna till Salt relaeses water, Phir Dahi Add karke, Jitna Pani chahiye aur salt to taste. Bas Dhi ki Chattni Tayar.

Wow! looks delicious. Only surprising thing is potli ka masala in biryani. I thought potli ka masala was used only in nahari or korma.
