Recipe: Egg Masala Curry

Ingredients:

  • 1 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 4 Egg, boiled
  • 1/2 tsp Salt
  • 1 tsp Coriander Powder
  • 1 tsp Ginger-Garlic Paste
  • 1 tsp Cumin Powder

For Curry:

  • 2 Tomatoes
  • 1/2 Cup Water
  • 1 tsp Salt
  • 1 Onion, finely chopped
  • 1 tsp Cumin Seeds
  • 1 tsp Turmeric Powder
  • 1 Green Chilli
  • 1 tsp Red Chilli Powder
  • 3 Tbsp Coriander Leaves
  • 1 tsp Coriander Powder
  • 1 tsp Garlic, chopped
  • 1 tsp Cumin Powder

For Tadka:

  • 1 tsp Mustard Seeds
  • 1/4 tsp Methi Seeds
  • 1 Kashmir Chilli
  • 1/8 tsp Hing
  • 1 tsp Kashmiri Chilli Powder
  • 8-10 Curry Leaves

Procedure :

  • Take boiled eggs in a bowl.
  • Add ginger-garlic paste, red chilli powder, turmeric powder, salt, cumin powder and coriander powder.
  • Mix the spices thoroughly.
  • Take a pan of oil, put the eggs in the pan and saute.

Curry:

  • Take a pan and add cumin seeds, green chilli and chopped onion
  • Saute them tilll golden brown and then add ginger, garlic, turmeric powder, coriander powder, cumin powder, red chilli powder and salt.
  • Mix them well.
  • Add water and let it simmer.
  • Now add tomatoes, mix well and add more water. Mix them thoroughly.
  • Grind the mixture to get the perfect mix of spicy gravy.
  • Put the eggs into the gravy and mix.
  • Now add coriander leaves and mix. Bring to simmer.

Tadka:

  • Put hing, methi seeds, mustard seeds, kashmiri chilli, curry leaves and kashmiri chilli powder in a pan. Saute well.
  • Pour it over the curry along with coriander leaves and mix well. Serve hot.
