Spicy Masala Baingan (Eggplant)

Ingredients :

Brinjal (Eggplant)3-4 (small size)
Tomato puree 1/2 cup
Ginger crushed 1/2 tsp
Garlic slices 1/2 tsp
Turmeric powder 1 tsp
Red chili powder 1/2 tsp
Garam masala 1/2 tsp
Cumin seeds 1/4 tsp
Cinnamon stick 1 piece
Onion chopped 1 small
Coriander powder 1/2 tsp
Salt to taste
Sugar a pinch 

Method:

First cut the small eggplants into halves and apply some turmeric powder and salt and rub it nicely so that the turmeric and salt evenly coated.

Then make 3-4 gas mark back side of the every piece of brinjal and fry them into the hot oil for 1 minutes each side over medium heat.

Once they are looking golden brown then take out.

Now in the same oil add cinnamon stick and cumin seeds. After that add crushed ginger and garlic, turmeric powder.Give a good stir.

Add the chopped onion or you can add later.

Now add the tomato puree and salt. Stir and let it cook for 3-4 minutes over medium heat.

Add the coriander powder, red chilli powder and again stir it well.

Now add sugar and stir again and cover it up and add the fried eggplant, garam masala and give a gentle mix.

Enjoy this delicious eggplant with rice or chapati.
